This posh beans on toast serves 2 and is really simple to make! Takes about 5-10 minutes at most. Nutritious and easy!
2 slices of your favourite proper bread ( I used sourdough from our local cooperative bakery)
1 tin of blackeyed beans
Half a courgette
A long red sweet pepper
4 big handfuls of spinach
Tomato puree (tube, tin, whatever)
Chia seeds (or sesame seeds. Anything small looks good!)
Warm a frying pan and blob about a tablespoon of coconut oil in. Whilst waiting for the pan to warm and the oil to melt, chop up the courgette and pepper. I keep the seeds in, but you can remove if you prefer.
Drain and wash the beans and pop them in a saucepan with some water. Heat through for 4-5 minutes (follow the instructions on the can!).
Everything ‘should’ be cooked at the same time. Once your veg is browned, the spinach wilted and your beans are hot, put your bread slices in the toaster on whichever setting you prefer. I like a bit of crunch but not too charred!
Drain the beans and return to the pan on the lowest heat you can. Add a level teaspoon (ish) of smoked paprika and a couple of good squirts of tomato puree. Mix around so the beans are coated. Now add the cooked veg to the same pan and mix it all together. You can add a tablespoon of water if your puree looks a little dry. Ok! It’s all ready to go!
Ping! Your toast should be done by now so cut each piece in half, pop 2 halves on each plate and spoon the bean and veg mix over the top. Sprinkle a teaspoon of chia or sesame seeds over the top of each serving.
