OESeats: Health Bowl

You’ll need:

2 handfuls of pot/pearl barley
2 handfuls of puy lentils
1/2 a tin of whatever beans you want (I used broad beans)
1/2 a pepper (whichever is your favourite colour) chopped up
A handful of chopped celery
A few olives, black and green (I used 6 and ate another 8 whilst making it)
1/4 of a lettuce, chopped, or a big handful of salad leaves
A handful of sweet corn
A handful of long beans
2 handfuls of stir fry veg (or just whatever veg is lying around)
Tomato purée
Soy sauce
Coconut oil

Ok. If you’ve got dry lentils, boil them for 10 mins, discard the water, then simmer until done (about 35 mins). Simmer your barley at the same time, they’ll be ready about the same time 🙂

If you’ve got ready to eat lentils, easy peasy.

Once the lentils and barley are done put then to one side, then bung all your veg minus the lettuce in a frying pan with a blob of coconut oil, a splash of soy sauce and a squirt of tomato purée. Flash fry on a high heat until hot but still a bit crunchy. Get your beans and drain the can.

Pour everything into a huge bowl, mix it up, pour some more soy on if you want. Also good are olive oil, chilli flakes, 5 spice, smoked paprika….list is endless. You can top with lemon zest, feta, Parmesan, ground pepper….

Big rainbow bowl full of protein, fibre, vits and happiness. Veggie and vegan, if you omit the cheese and any meaty additions.

You can stick some meat or fish in too if you want. Smoked salmon or Parma ham go particularly well.

Grab a fork and dive in. Makes one big bowl with a few leftovers. Stick em in the fridge and have for tea.
